Breakfast can become a repetitive and boring meal if you are someone who eats the same three or four things everyday. Try these simple recipes to shake your routine up a bit, and give your breakfast some spice. Many of these recipes are also good for brunches and small gatherings, so give them a try!

1. Egg and Prosciutto Panini

This simple yet sophisticated sandwich is delicious, and only takes 15 short minutes to make.

Here’s What You’ll Need:

  • 8 large eggs
  • kosher salt and black pepper
  • tablespoons unsalted butter
  • soft rolls, halved lengthwise
  • ounces prosciutto, thinly sliced
  • ounces Swiss cheese, thinly sliced

Mix the eggs with the salt and pepper. Butter your skillet, and scramble your eggs until fully cooked. Put the eggs on the bottom half of the soft roll, and put your prosciutto and cheese on the top. Place your freshly made sandwiches back in the pan (with some more butter to prevent sticking) and cook 4-6 minutes, pressing down on the top of the panini with a spatula or the bottom of a pan, to ensure everything melts together properly. Serve hot, and consider putting some salsa on the side for dipping!

This quick and easy breakfast snack is delicious, and looks a lot fancier than it actually is. It’s perfect for a solo breakfast, but it’s also a great hit at brunches and reunions. The recipe below serves one, but if you multiply it per ham cup, you can whip up a whole batch in no time.

Here’s What You’ll Need:

  • 1 slice ham, thin
  • 1 egg
  • 2 teaspoons parmesan cheese, grated
  • 1 tablespoon green onion, chopped
  • a smidge of oil
  • salt
  • pepper

Preheat your oven to 375F, and get your muffin tin prepped by oiling it lightly. Line one of the muffin cups with the ham slice, and add your egg, cheese, green onion, and a dash of salt and pepper. Bake for 15-20 minutes, or less time if you like the yolk still runny.

4. French Toast That Rolls

These fun little french toast roll-ups are heavenly, and put all other breakfast foods to shame.

Here’s What You’ll Need:

  • 8 slices white sandwich bread
  • softened cream cheese, diced strawberries, or Nutella
  • 2 eggs
  • 3 tablespoons milk
  • ⅓ cup granulated sugar
  • 1 heaping teaspoon ground cinnamon
  • butter, for greasing the pan

Take your white bread and slice off the crusts. Use a rolling pin to flatten out the bread, place any toppings you’d like on one side of the bread (cream cheese and strawberries are what’s being used in the picture), and roll them up so the toppings are on the inside. Dip them in the egg/milk mixture, brown them in a skillet for about 2 minutes, and then dip them in cinnamon sugar.

Hawaiian Breakfast Pizza is a fun way to shake up your regular morning routine.

Here’s What You’ll Need:

  • 1 prebaked 12-inch thin whole wheat pizza crust
  • 6 eggs
  • 1/4 teaspoon pepper
  • 1 cup cubed fully cooked ham
  • 1 cup unsweetened pineapple tidbits, drained
  • 3/4 cup shredded cheddar cheese
  • 1 tablespoon minced fresh parsley
  • Salsa and reduced-fat sour cream, optional

Put the pizza crust on a pan, and set to the side for later. Mix the eggs and pepper into the eggs and cook until almost set. Move the eggs to the pizza crust, and sprinkle the ham, pineapple, and cheese on top. Bake at 400 degrees for 9-12 minutes, sprinkle parsley on top, and serve with sour cream and/or salsa.

For a quick and easy breakfast to go, try this simple, strawberry smoothie. Put some strawberry or vanilla breakfast powder in a cocktail shaker, along with some milk – try strawberry milk for an extra sweet twist. If you have the time, put it in the blender instead of the cocktail shaker with some strawberries and a banana.
